Here is the simplest recipe! You will need very few ingredients for an absolutely delicious result.
30 g g ginger, cut into fine julienne strips
200 g tofu
2 garlic cloves, chopped
1 tablespoon coconut sugar
1 tablespoon light soy sauce
2 tablespoons vegetable stock
3 tablespoons tamarind juice
8 tablespoons frying oil
Heat the oil and fry the ginger for 1 minute or until golden and crispy, then drain on kitchen paper. Follow the same procedure with the tofu (cook for about 2 minutes).
In a tablespoon of the oil used previously, stir-fry the garlic over a medium heat until golden. Then add the sugar, soy sauce, vegetable stock and tamarind juice. Mix well and then pour in the tofu. Stir again and remove from the heat.
Transfer to a serving dish. Garnish with the crispy ginger.
