Cucumber salad, dried shrimps, mint and peanuts

 

This salad from Northern Thailand is very refreshing. It's also made in no time and doesn't require specific ingredients. Enjoy it with glutinous rice or fermented rice noodles.

Serves 2

 

2 cucumbers, sliced or shredded

1 indian shallot, sliced

2 tablespoons roasted peanuts

2 tablespoons dry shrimps

1 red hot chili, sliced

1 tablespoon coconut sugar

2 tablespoons fish sauce

2 tablespoons lime juice

1 tablespoon mint leaves, chopped

1 tablespoon coriander leaves, chopped

 

Combine all the ingredients in a bowl (reserve a few peanuts and a coriander or mint leaf to garnish). Mix well. Taste to adjust the seasoning.

Serve with glutinous rice or fermented rice noodles.
