Serves 2.
2 tablespoons oil
15 g garlic, coarsely chopped
½ fresh red cayenne pepper, sliced
1 fresh bird's eye chilli, thinly sliced
15 g fresh green peppercorns
300 g beef fillet, sliced
1 kaffir lime leaf, thinly sliced
1 small handful Thai basil leaves
Seasoning:
2 tablespoons chicken stock
½ tablespoon light soy sauce
½ tablespoon fish sauce
1 tablespoon oyster sauce
½ teaspoon coconut sugar
Heat the oil and stir-fry the garlic, bird's eye chilli, cayenne pepper and green peppercorns for about a minute, until they release their aroma.
Pour in the seasoning, mix well and add the meat. Cook for about thirty seconds for medium rare or one minute for well done.
Add the basil and kaffir lime leaf, mix well and remove from the heat.
