Here is a recipe ideal for beginners as well as for cooks in a hurry. Its preparation will take no more than 10 minutes. Serves 4
500 g squid, cut into 2 cm strips
2 tablespoons vegetable oil
6 garlic cloves 1 teaspoon white pepper 4 coriander roots
1 teaspoon fish sauce 2 tablespoons oyster sauce 1 tablespoon light soy sauce 1 teaspoon coconut sugar
To serve : coriander leaves
Prepare the "saam gler" (garlic-coriander paste) : pound garlic, pepper and coriander roots until smooth. In a wok or frying pan, heat oil and stir-fried garlic-coriander paste and squid over high heat for 2 minutes. Add the seasoning and stir well, then remove from the heat. Transfer to a serving dish and garnish with coriander leaves.
Tip : the squid must be cooked very briefly or the flesh will become hard. Squid is often softer when young or thicker in flesh. For this recipe we recommend that you choose thick squid.
