Pad mee kati, the pad thai from Southern Thailand

There are many kinds of Pad Thai ! Here's a typical recipe from Southern Thailand, with coconut cream.

Serves 2.

3 dry spur chilies, stems and seeds removed

50 g shallots

60 ml vegetable or chicken stock

1 pinch salt

1.5 tablespoon fish sauce

1 tablespoon coconut sugar

2 tablespoons tamarind juice

2 tablespoons oyster sauce

1.5 tablespoon roasted peanuts, crushed

50 g tofu, diced

2 tablespoons vegetable oil

6 prawns, deveined
