Stir-fried calamari, shrimp paste and pickled garlic


Enjoy a typical dish from Southern Thailand, made in no time !

Serves 2.

250 g calamari, cleaned, sliced

1 teaspoon white peppercorn

2 fresh garlic cloves

1 teaspoon shrimp paste

2 shallots, finely chopped

1 tablespoon oyster sauce

1 teaspoon fish sauce

1 teaspoon sugar

1 spring onion, cut in 3 cm lengths

6 pickled garlic cloves

2 tablespoons vegetable oil

Pound white peppercorn, fresh garlic and shrimp paste until smooth. Reserve.

Heat the oil in a wok or pan. Stir-fry the paste and shallots over medium heat until it starts to release the flavors (about 1 minute). Increase the heat and add calamari. Stir-fry for about 2 minutes.

Add the seasoning (oyster sauce, fish sauce and sugar), the spring onion and the pickled garlic. Mix well and cook for another minute.

Serve immediately.
