Southern Style Marinated Chicken Skewers with Spicy Tomato Sauce

When it comes to marinated chicken, most people think of sweet satay skewers or other sugar-heavy marinades. This Southern style marinated chicken offers something different: it’s less sweet, deeply aromatic, and full of layered flavors. Thanks to a simple paste of coriander seeds, cumin seeds, and lemongrass, the meat becomes wonderfully fragrant. Traditionally, these skewers are paired with a spicy tomato and coriander sauce for an authentic Thai experience.
Recipe – Southern Style Marinated and Grilled Chicken (6 skewers)
Ingredients (serves 2):
300 g chicken fillets or thighs (bones and skin removed), cut into 3 cm wide strips
Marinade:
1 teaspoon coriander seeds
1 teaspoon cumin seeds
10 g lemongrass, chopped
1 teaspoon salt
1 teaspoon coconut sugar
1 tablespoon oil
Method:
Pound the coriander seeds, cumin seeds, and lemongrass into a fairly smooth paste.
Add salt, coconut sugar, and oil, then mix well.
Marinate the chicken pieces for at least 20 minutes.
Divide into six portions and thread each onto a skewer.
Grill on a barbecue or pre-oiled grill for about 3 minutes per side, until cooked through.
Serve with a spicy tomato and coriander sauce
