Spicy tomato and coriander sauce, a traditional Thai side sauce for grilled meat and sticky rice

The spicy tomato and coriander sauce is not one of the classic Thai dipping sauces. Instead, it is a traditional side sauce, often served with grilled chicken or pork, and enjoyed with sticky rice. Unlike many Thai dipping sauces that are very sweet (like satay sauce or sweet chilli sauce), this recipe is lighter and less sugary while still packed with flavour. With a balance of tomato, lemongrass, tamarind and fresh coriander, it is a satisfying yet refreshing accompaniment that enhances a meal without overpowering it.
Recipe: Spicy Tomato and Coriander Sauce
Ingredients (serves 2)
2 tablespoons oil
5 g garlic, sliced
15 g yellow onion, sliced
10 g lemongrass, sliced
1 coriander root, sliced
150 g tomato, sliced
50 ml vegetable or chicken stock
1 coriander sprig, coarsely chopped
Seasoning
1 tablespoon fish sauce
½ tablespoon sugar
1 teaspoon chilli powder
Preparation
Heat the oil in a pan. Stir-fry garlic, onion, lemongrass and coriander root until fragrant.
Add the tomatoes and cook for 1 minute.
Blend the mixture finely with the stock and seasoning. Bring to a boil.
Simmer for 2 minutes, then adjust seasoning to taste.
Serve warm or at room temperature, garnished with fresh coriander.
Serving suggestion
This sauce is the perfect partner for grilled or marinated meats and sticky rice, making it a great option for a light snack or even a traditional Thai-style breakfast.
