📖 Recipe: Sweet and Sour Prawns with Tamarind


Ingredients (serves 2)

  • Oil for frying

  • 20 g cashew nuts

  • 1 dried cayenne pepper, stem and seeds removed, sliced

  • 20 g shallots, sliced

  • 1 small handful Thai basil

  • 300 g prawns, shelled, deveined

  • A few coriander leaves


Seasoning

  • 1 tablespoon coconut sugar

  • 3 tablespoons tamarind juice

  • 1 tablespoon fish sauce

  • 2 tablespoons chicken stock


Instructions

  1. Heat oil and fry the cashew nuts until golden brown. Set aside on kitchen paper.

  2. Fry the cayenne pepper briefly, then remove. Fry the shallots until crisp. Set aside. Fry half of the basil leaves until crisp and set aside.

  3. Stir-fry the prawns in two tablespoons of the same oil for 30 seconds to 1 minute.

  4. Add the seasoning and half the fried shallots. Stir and cook for another minute until prawns are done.

  5. Transfer to a serving dish and garnish with cashew nuts, chilli, shallots, fresh and fried basil, and coriander leaves.
