With Recipes from Southern Thailand, InFusion Cooking Classes Koh Samui presents a new book dedicated to the diversity and depth of Southern Thai cuisine. This volume brings together 50 authentic recipes inspired by Thai, Chinese and Muslim culinary traditions, offering a complete panorama of a region where spices, seafood and cultural exchange shape everyday cooking.


The book is part of a broader collection celebrating the variety of regional Thai cuisines. Following eight previous thematic books on curries, salads, soups, wok dishes, meat and seafood, snacks, Pad Thai and plant-based cooking, this new series explores the flavours of Thailand from North to South.

A coastal and spicy cuisine

Southern Thai cuisine is famous for its bold flavours, marked by saltiness, heat and tang. Bordered by the Gulf of Thailand to the east and the Andaman Sea to the west, this region makes generous use of fresh fish and seafood. You will find iconic dishes such as massaman curry, chicken or pork satay with peanut sauce and cucumber relish, and regional favourites like Phuket-style pineapple salad or stir-fried clams with chilli paste.

A culinary heritage of cultural exchange

The South of Thailand reflects a rich blend of influences. Chinese culinary traditions have long shaped the cuisine of Phuket, while Muslim heritage remains strong in the former provinces of the Pattani Sultanate. This mix of cultures results in layered flavours, complex seasonings and the abundant use of local herbs and spices. The region’s warm, humid climate allows year-round cultivation of many key ingredients, giving Southern Thai food its unique freshness and intensity.
