Thai banana fritters with coconut sauce

A simple and comforting Thai dessert
Thai banana fritters are among the most popular desserts in Thailand. Sold everywhere from street stalls to restaurants, they are loved for their crispy exterior and soft, melting centre. What makes this version special is the addition of freshly grated coconut to the batter, which gives it a delicate, fragrant Thai touch. It is an easy recipe that can also be adapted with other fruits such as pineapple.
Recipe for Thai banana fritters with coconut sauce (serves two)
Ingredients
Coconut sauce:
1 tablespoon coconut sugar
4 tablespoons coconut cream or coconut milk
1 pinch of salt
Batter:
60 g tempura flour
1 teaspoon baking powder
2 teaspoons coconut sugar
1 pinch of salt
25 g freshly grated coconut
90 ml water
Other:
2 bananas (about 250 g flesh), cut into large pieces
Oil for frying
1 tablespoon freshly grated coconut, for garnish
Preparation
Prepare the coconut sauce. Dissolve the sugar and salt in the coconut cream or milk. Set aside.
Make the batter. Combine all the ingredients until smooth.
Coat the bananas. Dip the banana pieces into the batter until well covered.
Deep-fry. Heat the oil to 180°C and fry the bananas for about two minutes, until golden brown. Drain on paper towel. Transfer to a serving plate and sprinkle with freshly grated coconut.
Serve. Enjoy hot or warm, drizzled with the coconut sauce.
Tips for perfect banana fritters
This recipe is a great way to use overripe bananas. You can replace them with pineapple or firm mango.
If the batter feels too thick, add a little water.
For an extra treat, serve the fritters with coconut ice cream.
