Thaï Spicy Burgers or "Luk Nua"

Once you get a taste, you'll be hooked !
This is a recipe we are particularly found of, mixing different culinary traditions. The ingredients are readily available in any country.
First of all, choose quality beef and pork meat, in the same quantities and mince it. We recommend 600 g meat for 4 persons.
Add 50 g green beans sliced, 2 onions and 2 cloves garlic finely chopped, 3 tablespoons finely chopped fresh coriander leaves, stems and roots, 1 fresh red chili finely sliced (optional), 1 teaspoon sugar, 1 teaspoon pepper, 1/2 teaspoon salt, 1 tablespoon red curry paste, 1 egg lightly beaten.
In a large bowl, combine all ingredients, knead mixture thoroughly until it clings together well. Roll into balls and shape into 5 cm diameter patties, shallow-fry or grill the patties. Garnish with coriander leaves, if desired. This is the original recipe of the "Luk Nua", terms that literally mean "Meat Balls".
For a change, you can add sesame breads, salad, tomatoes and Thai spicy ketchup. We are used to buy our sesame breads at "Take a Bread", in Bophut, our favorite bakery, managed by Thai cooks. Don't hesitate to ask us for the location !
